The inspiration for this dish came from a huge craving to eat cream and cheese. There is just something delightful about cheesy things that make you smile. A friend once asked me "If you could only choose one thing, sex or cheese, what would it be?". I would choose cheese. I can't live without that stuff. Add some smoky bacon into it and you have an epic dish of epicness.
Note: I am lactose intolerant, oh the irony.
Ingredients
- 3 cups of rice
- 2 cups of frozen peas
- 1 tsp butter
- 1/2 cup cream
- 1 tsp flour
- 1 cup milk
- 4 strips bacon (more if you want)
- 1 cup mozzarella
- 1 cup cheddar
- Cook the rice in the rice cooker, add just a little less water than required
- Preheat the oven to 375 degrees
- Cut up the bacon in to small pieces, use scissors (it's easier)
- Heat up a pan with a little bit of olive oil
- Fry the bacon until cooked or crispy
- Add the peas to the pan and the butter
- Mix the cream, flour and milk in a bowl and whisk well
- When the peas are cooked stir in the mixture
- Season with salt and pepper
- Simmer on low heat and constantly stir
- When the rice is cooked, stir the rice in to the pea-bacon-cream mixture
- Place the whole thing in to a dish and cover with cheese
- Bake the dish for 15 minutes
