Recipe of the day: Pea & Bacon Casserole

Serves - 3
The inspiration for this dish came from a huge craving to eat cream and cheese. There is just something delightful about cheesy things that make you smile. A friend once asked me "If you could only choose one thing, sex or cheese, what would it be?". I would choose cheese. I can't live without that stuff. Add some smoky bacon into it and you have an epic dish of epicness.


Note: I am lactose intolerant, oh the irony.



Ingredients
  • 3 cups of rice
  • 2 cups of frozen peas
  • 1 tsp butter
  • 1/2 cup cream
  • 1 tsp flour
  • 1 cup milk
  • 4 strips bacon (more if you want)
  • 1 cup mozzarella
  • 1 cup cheddar
  1. Cook the rice in the rice cooker, add just a little less water than required
  2. Preheat the oven to 375 degrees
  3. Cut up the bacon in to small pieces, use scissors (it's easier)
  4. Heat up a pan with a little bit of olive oil
  5. Fry the bacon until cooked or crispy
  6. Add the peas to the pan and the butter
  7. Mix the cream, flour and milk in a bowl and whisk well
  8. When the peas are cooked stir in the mixture
  9. Season with salt and pepper
  10. Simmer on low heat and constantly stir
  11. When the rice is cooked, stir the rice in to the pea-bacon-cream mixture
  12. Place the whole thing in to a dish and cover with cheese
  13. Bake the dish for 15 minutes
